Commercial ice machines are refrigeration plant with a water circuit bolted to them, which is why most breakdowns are one of four things: a scaled or fouled evaporator, a water inlet or float problem, a condenser rejecting badly, or a refrigerant charge and control fault. Diagnosing in that order avoids replacing compressors that were never the fault.
Gauteng municipal water is moderately hard, so scale is the dominant wear mechanism on evaporator plates, spray bars, water pumps and float valves. On sites without treatment, harvest cycles lengthen, cubes go cloudy and hollow, and output falls well below the plate rating long before anything actually fails.
